  • The claim that adding spices and chopped onions to your burgers ruins the texture is utter nonsense. The thing that screws up burger texture is salt and overmixing. Simply add whatever spices you like in your burger, work the meat as little as possible when shaping into patties, and salt during cooking. Kenji just told us not to salt, and I agree 100%. Unless you are using wagyu or dry aged meat in your patties, not adding spices is DUMB. Even garlic powder alone will hugely improve taste.

  • I always wipe my grill grates down with an olive oil soaked rag after wire brushing to both lengthen the life of the grates and to remove any rogue wires that came off the brush. Look up someone swallowing a wire when eating if you think I'm crazy😂
